The blue cheese and apples make this a classic winter pizza. And, we made this pizza entirely from in-house ingredients, which made it rather a feat. Just explore your fridge to see what you have on hand, and then whip up something inspired by the contents of your cupboards.
Preheat the oven and a pizza stone to 450 or 475.
Roll out the pizza dough (pre-made, trader joe’s raw dough, or made from scratch) and rub with olive oil and freshly chopped garlic.
Parboil two-ish red potatoes by dropping in a pot of boiling water until just the outside starts to cook – about five minutes. Slice the potatoes and top the pizza dough, along with some chopped rosemary and slices of fuji apples. Crumble blue cheese on top.
Bake until the cheese starts to melt and the pizza dough is golden.
