Fresh Grilled Peaches

This is a simple dessert. Our friend Sara brought these sweet peaches back from the east side of Washington – Naches, outside Yakima. Fresh grilled peaches taste like the smoky essence of a late summer evening barbecue. They’re simplicity to make, and the perfect topping on a bowl of frozen yogurt. They taste lovely eaten indoors too, but are most special eaten beside the embers of a campfire.

Cut a ripe peach in half, scoring it all the way around. Twist the peach halves counterclockwise to open it up and remove the peach. Roast the peach center-side down over a medium-high grill until it starts to soften and leaves grill marks. Then turn it over and grill on the other side until it’s starting to run with juice and shows grill marks – another four minutes or so.

Serve over greek frozen yogurt or ice cream, top with balsamic vinegar and a sprinkle of sugar, or just enjoy it plain, hot off the grill.
