Watermelon Summer Salad

Our little neighborhood at the cabin has a gathering once a year, and all of the neighbors walk down the road, down a rustic path, to a birthday celebration that brings us all together. Everyone brings a dish, and we sit and talk and drink wine and admire the view, and eat with people we might otherwise only wave to in passing when we saw them out on the road.

This dish from epicurious is a perfect potluck salad, for a warm day when you feel very little like cooking, and very much like just enjoying the flavors of summer.

Watermelon Salad With Feta
Watermelon Salad With Feta

Into similar-sized pieces, chop one 4-pound watermelon; a pound or a pound and a half of heirloom tomatoes; and 1 medium sweet onion. Add a generous handful of fresh  chopped mint and a cup of crumbled feta.

  1. Just getting ready to post a similar (but different!) recipe. Great minds and all that. Hope you are enjoying some fabulous weather. You might not believe it but it is HOT in Scotland. Or rather was, until earlier today when a storm blew through. x
