Summer and peaches go together so perfectly. And, right now thyme is flowering away in the garden. Sounds like a summertime cocktail, if we ever heard of one!
In a pint glass or cocktail container, muddle 1/2 of a very ripe peach, and the leaves and flower buds of several stems of thyme. (For a slightly sweeter cocktail, add a tsp of sugar and muddle that too.) Add a shot of vodka (we love Dry Fly), several ice cubes, and shake vigorously. Strain into a glass, top with tonic water, add a squeeze of lime, and garnish with a sprig of flowering thyme and a peach slice.
Full disclosure – today it was grey and rainy all day in Seattle. Not exactly hot summertime weather. However, we find the more of these you drink, the more summery you do feel. Cheers to our friends in more sunny climes.
- 1/2 ripe peach
- several sprigs of thyme (flowering is nice)
- shot of vodka
- bit of lime
- tsp of sugar (if you’d like)
- tonic water
