Fresh Egg and Black Bean Breakfast Tacos


Breakfast at the cabin is special – outside, on a sunny porch, under the trees, in the fresh air, with the birds singing away. This breakfast was especially special because our friend Sara gave us some eggs fresh from her backyard chickens. We wanted something to really showcase their bright, yellow, sunshiny richness.

Fry up an egg, sunny side up.

Set aside the egg. Then, turn the frying pan back to medium heat and add 3/4 cup of black beans, along with their juice. Sprinkle in garlic powder, cumin, salt and pepper. Bring to a simmer, then cook down until the water is gone and the beans are warm.

When the beans are ready, set them aside in a bowl. Add a corn tortilla to the frying pan (we’re big into La Abuelita Bonita tortillas at the moment), put the beans on top, the egg on top of that, and salsa on top of that. Enjoy. Preferably in your own woodland setting.
