Ham and Cheese Empanadas – Great Super Bowl Appetizers!

Time to start thinking about super bowl appetizer recipes! Our friend Jessica spent some time in Argentina – much to our benefit. She came over and cooked us up these delicious snacks recently. These ham and cheese empanadas – from The South American Table cookbook – are delicious!

Heat some olive oil in a small frying and saute a finely chopped large onion until it’s translucent. Take off the heat.

Soak 1 cup bread crumbs in 1/2 cup milk for 30 minutes. Then squeeze out the bread crumbs and put them in a medium bowl. Add the onion, 8 oz chopped boiled ham, 8 ounces chopped Edam cheese, 1/2 tsp ground black pepper, and 1 large, lightly beaten egg. Mix well.

Roll out a pastry shell or puff pastry on a lightly floured surface and cut into 5 or 6 inch circles (use a cup). Put 2 heaping spoonfuls of filling in the center of each pastry round. Fold over and press down to seal. You could use a fork or roll with your hands.

Brush the tops with a whipped egg and cook in the oven for 30 minutes, until the top is golden brown.

Another appetizer favorite: Cream cheese pickle wraps with prosciutto!
