It may seem like we’re on an eating rampage, dear FoodShed reader, but when we travel, we like to find new restaurants and revisit our old favorites. And this is how we found ourselves back at Amelia’s Mexican Restaurant – a charming, cozy place in Hillsboro – devouring the handmade tortillas the moment they were brought to our table.
We ate the tortillas so quickly we didn’t have time to get a picture of them. BUT, we did have the self-restraint to get pictures of our lunches. The fish tacos are crunchy, tangy, and delicious. Normally, we prefer non-breaded fish. But the egg batter on this fish is so light and fluffy and crunchy that we could eat it all day if our stomachs were larger. The rice comes with bits of vegetables mixed in, and the beans are slightly smoky, rich, and delicious.
The enchiladas verdes picture speaks for itself. Don’t you want that?! It’s even better than it looks. It’s filled with shredded chicken that’s garlicy, flavorful and moist. The green sauce is incredible too. After this meal, we wanted to curl up in little pools of sunshine on a beach and nap. We certainly felt worlds away from the grey, wintry weather of Hillsboro.
