Ciabatta Breakfast Sandwich with Egg, Sausage & Pickles


Good morning! On a cold fall day, a hot breakfast is a nice way to start your day. And, if you’re in a hurry, you can always wrap this sandwich in some wax paper and eat it on your way out the door.

Toast two slices of ciabatta. Heat up a sausage (we like the morningstar soy sausages). Put a slice of mozzarella on your sausage about halfway thru cooking, so the cheese melts. Fry up an egg. We like to poke the yolk right before we flip it, so it doesn’t make a mess. Spread mayo and dijon on the ciabatta. Slice up a homemade pickle and layer the pickle, the cheesy sausage and the egg. Enjoy!
