Warm Huckleberry & Honey Ice Cream Topping


It’s fall on the Key Peninsula in Washington, and the bears are busy eating huckleberries and getting ready to hibernate. We’ve been out picking huckleberries too, so far successfully avoiding our large brown friends. This easy, fresh topping goes great over ice cream. We poured it over some tart frozen yogurt.

Melt a tablespoon or two of butter in a small saucepan, over medium heat. Pour in about 1/2 cup of orange juice, a tablespoon or two of honey, and a 1/2 cup to a cup of fresh huckleberries. Bring to a simmer until the berries start to burst. Stir gently a few times and pour over your ice cream.
