Orzo Salad With Basil, Kalamatas and Feta

Perfect for a picnic, a work lunch, or a light dinner. Orzo salad is one of my favorites. And, tomatoes and basil are going nuts in a our garden right now, so what a delicious way to enjoy them.

Boil water, add the orzo (it cooks just like pasta) and gather the rest of your ingredients. Red onion, baby tomatoes, basil, olive oil, balsamic vinegar, kalamata olives, and feta.

When the orzo’s soft to the teeth, drain it, rinse it, and toss it in a bowl with your ingredients. Crumble in the feta, stir it all up with some salt and pepper, and season until it tastes perfectly summery.
